LUNCH FOR CRUSADERS

layer upon layer of defense, like an onion red,
shield and spear, like mushroom, chanterelle, oh redeem,
the Norman warrior from castle garden with cauliflower trees,
parsil, rivers of broth, oh heart of war and peace.
You are the salt of the earth,
the crusader’s rebirth,
black and white pepper, the dark and light,
the gorgonzola, the scent and the might,
you tear down the walls of Bysantium,
oh proud crusader, beat your battle drum.
MUSHROOM SOUP IN BREAD
Dried funnel chanterelles
Fry mushrooms and onion. Add cauliflower. Add cream, chanterelles and vegetable broth. Add spice. Simmer forever under lid. Add gorgonzola. Make a cave in the bread roll. Pour soup into it. Add parsil.
