SPRING OF 1821
The cradle of civilization, fair Greece,
your yoghurt, tomatoes, each tasty little piece,
you rose against the Ottomans in Peloponnese,
with cucumber, garlic and feta cheese.
Add a few splashes of golden sweet corn,
salt to remind of the oath that you’ve sworn,
to spread like paprika and pepper and mourn,
the dead and rejoice each new Spartan born.
And stand up, oh Hellene, you are a hoplite,
raise the Greek banner, the blue and the white,
hold up the chives, ten thousand spears’ might
to show the Sultan how patriots fight.
Chop cucumber and tomatoes. Mix greek yoghurt, feta cheese, cucumber, tomatoes, corn, garlic and salt. Add chives, paprika powder and black pepper on top.
